  • Water: 4 cups water. Used for soaking and blending the rice.
  • Milk: 1 cup milk (or almond milk for a dairy-free option). Adds creaminess to the drink.

Instructions:

Step 1: Toast the Rice

  1. In a skillet over medium heat, you toast the rice and cinnamon. Many people soak it, but I prefer to toast it because it releases more of its flavor and aroma!
  2. Mix the rice and cinnamon in low heat for about 5 minutes until the rice is nice and golden. By this time your kitchen will be smelling soo good!

Step 2: Transfer the Mixture

  1. Once the rice and cinnamon stick have soaked and the rice has a golden color, transfer the mixture to a blender.
  2. Add 1 teaspoon of vanilla extract, 2 cups of water, 1 cup of condensed milk, and 1 cup of evaporated milk to the blender.

Step 3: Blend Thoroughly

  1. Blend the mixture until it is completely smooth and the rice is well pulverized. This usually takes about 2-3 minutes. Aim for a silky, creamy consistency.

Step 4: Strain the Mixture

  1. Place a fine-mesh strainer or cheesecloth over a large bowl or pitcher.
  2. Pour the blended mixture through the strainer to separate the liquid from any remaining rice solids. You may need to do this in batches.
  3. Use a spoon to press down on the solids to extract as much liquid as possible.

Step 5: Dilute and Chill

  1. After straining, add 1-2 cups of cold water to the horchata to adjust the sweetness and thickness to your preference.
  2. Stir well and refrigerate the horchata until it is thoroughly chilled.

Step 6: Serve

  1. When ready to serve, fill glasses with ice cubes and pour the chilled horchata over the ice.

Recipe Tips

Blend the soaked rice and cinnamon stick until the rice is finely ground. This ensures that the horchata has a smooth texture. If you notice any grit or texture in the strained liquid, blend a bit longer.

If you prefer a dairy-free version, use almond milk, coconut milk, or another plant-based milk. This keeps the traditional flavor while accommodating dietary preferences.

Horchata can settle over time, so give it a good stir before serving to redistribute any settled ingredients.

FAQ’s & Serving Suggestions

Can I make horchata without dairy?

  • Yes, you can make dairy-free horchata by substituting regular milk with almond milk, coconut milk, or any other plant-based milk. The flavor will still be delicious and creamy.

How long does horchata need to soak?

  • The rice and cinnamon should be soaked overnight or for at least 6-8 hours. This softens the rice and enhances its ability to blend smoothly, resulting in a creamier drink.

Can I use instant rice for horchata?

  • It’s best to use long-grain white rice rather than instant rice. Instant rice does not have the same texture and may not blend as smoothly, affecting the consistency of the horchata.

How do I get the horchata smooth and creamy?

  • Yes, you can adjust the sweetness to your liking. Start with the recommended amount of sugar and add more if needed. You can also use other sweeteners like agave nectar or honey.

How can I add extra flavor to horchata?

  • For added flavor, consider incorporating a splash of vanilla extract or a pinch of nutmeg. You can also experiment with a small amount of almond extract for a different twist.

How should I store leftover horchata?

  • Store leftover horchata in an airtight container in the refrigerator for up to 3-4 days. Make sure to stir it before serving as it may settle over time.

Can I freeze horchata?

  • Freezing horchata is not recommended as it can affect the texture and flavor. It’s best enjoyed fresh and chilled.

Can I make horchata in advance?

  • Yes, you can prepare horchata in advance and keep it in the refrigerator. Just make sure to stir it well before serving.

What are some traditional garnishes for horchata?

Can I use a different type of cinnamon?

How Can I Make Agua de Horchata Alcoholic?
