- 8-10 Corn tortillas
- Salsa verde
- Shredded Mexican cheese
- Sour cream
- Onions
- Oil
Prepare Your Ingredients
In a bowl, shred the cooked chicken and set it aside. Additionally, shred the queso fresco and finely chop the onion and lettuce to prepare for assembly.
Warm the Tortillas
To make the tortillas pliable and prevent them from breaking, warm them. You can either: Alternatively, you can microwave the tortillas. Wrap them in a damp paper towel and heat in the microwave for about 30 seconds. Heat a small amount of oil in a skillet over medium heat and briefly fry each tortilla for about 10-15 seconds on each side until soft. Drain on paper towels.
Assemble the Enchiladas
Spread a small amount of the green enchilada sauce (about 1/4 cup) on the bottom of a greased baking dish to prevent sticking. Take one tortilla and place about 2-3 tablespoons of the chicken filling down the center. Optionally, add a sprinkle of chopped onions. Roll the tortilla tightly around the filling and place it seam-side down in the prepared baking dish. Repeat this process with the remaining tortillas and filling.
Add Salsa Verde and Cheese
Once all the enchiladas are assembled in the dish, pour the remaining salsa verde evenly over the top. Sprinkle the shredded cheese over the enchiladas, covering them generously.
Taste and Adjust
Taste the salsa and adjust the salt, cilantro, or chilies to your liking. If you prefer more heat, you can blend in extra chiles at this point.
Cool and Serve
Let the salsa cool completely before serving, or store it in the fridge for a few hours to allow the flavors to meld together. Serve your homemade salsa verde with your favorite dishes, such as tacos, enchiladas, grilled meats, or simply with tortilla chips.
