Crispy Potato Tacos (Tacos de Papa)

These crispy, golden tacos filled with seasoned mashed potatoes are perfect for any meal. Easy to make and incredibly satisfying, they’re sure to become a family favorite!

Ingredients  

  • 8 potatoes, peeled and cubed
  • 1 tbsp salt
  • 12 corn tortillas
  • vegetable oil, for frying, about 1/2 inch in the skillet)
  • 3 cups shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup crumbled queso fresco
  • 1 cup shredded mozzarella cheese
  • 1/2 cup Mexican crema or sour cream
  • 1/2 diced onions
  • 2 ripe avocados
  • 1 lime for guacamole
  • 2-3 chiles verdes

Instructions 

Prepare the Potatoes

  1. Peel and cube the potatoes. Place them in a large pot and cover with water. Bring to a boil over high heat and cook until tender, about 15-20 minutes.
  2. Drain the potatoes and return them to the pot. You want to mash the potato mixture them until smooth.

Season the Filling

  1. Stir in salt, mozzarella cheese, Mexican queso fresco, onion powder into the mashed potatoes. Mix until well combined and set aside.

Warm the Tortillas

  1. Heat the corn tortillas on a griddle or in a microwave until pliable. This helps prevent them from cracking when folded. I typically put them in the microwave for about 3 minutes.

Assemble the Tacos

  1. Place about 2 tablespoons of the seasoned potato filling in the center of each tortilla. Sprinkle a small amount of shredded mozzarella cheese on top of the filling. Fold the tortillas in half to form taco shapes.

Fry the Tacos

  1. In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat.
  2. Fry the tacos in batches, turning occasionally, until they are golden brown and crispy, about 2-3 minutes per side. The mozzarella cheese will melt and add a gooey texture inside.
  3. Use tongs to remove the tacos from the oil and drain them on paper towels.

Prepare the Toppings

  1. While the tacos are frying, prepare your desired toppings such as shredded lettuce, diced tomatoes, crumbled queso fresco, Mexican crema, salsa, diced onions, and guacamole.

Serve

  1. Once the tacos are crispy and drained, serve them immediately with your favorite toppings and garnishes.
