Carne Asada Tacos

Carne asada tacos are a classic Mexican dish featuring thinly sliced, marinated, and grilled beef—usually flank or skirt steak—served in soft corn or flour tortillas. Whether it’s taco night with friends or when I’m craving a taste of Mexican street food, these carne asada tacos always hit the spot.

Ingredients  

  • 1 pound flank steak or skirt steak
  • 8 corn tortillas
  • 1 cup finely chopped white onions
  • 1 cup fresh cilantro leaves
  • 3 limes cut into wedges for serving
  • Guacamole

Instructions 

  1. Place the flank or skirt steak in a resealable plastic bag or shallow dish.Pour the marinade over the steak, ensuring it is fully coated.Seal the bag or cover the dish, and refrigerate for at least 1 hour.
  2. Preheat your grill to high heat (around 400°F to 450°F). If using a cast iron skillet, heat it over medium-high heat.
  3. Remove the steak from the marinade, allowing excess marinade to drip off. Place the steak on the grill and cook for about 4-5 minutes per side for medium-rare, depending on the thickness of the meat. Use a meat thermometer to check for an internal temperature of 130-135°F (54-57°C).
  4. Once cooked, transfer the steak to a cutting board and let it rest for 5-10 minutes. After resting, slice the steak thinly against the grain to ensure tenderness.
  5. While the steak is resting, warm the corn or flour tortillas on the grill or in a skillet until they are soft and slightly charred.
  6. To assemble the tacos, place a few slices of carne asada in the center of each tortilla. Top with your desired toppings: Lime wedges, diced onions, chopped cilantro, guacamole and salsa.
  7. Squeeze some fresh lime juice over the top. Add hot sauce or salsa if you want more heat.
